Most kids love snacking on fruits, but the problem with it is it isn’t filling nor substantial enough as a snack.
Making little cute ‘sandwiches’ out of fruits with an nutritious layer that adds in a healthy fat and protein component takes your fruit lover’s snack to another level! Kind of like adding a dip, but less messy 😉
I made some apple sandwiches for Simsom yesterday, one with peanut butter, and the other with goat yogurt mixed with olive oil & a sprinkle of ground flaxseeds. Theo used to love them too! All nut or seed butters are great ideas, they work so well with banana slices too. So are hummus, avocado, and mashed beans with things like cucumber rounds & even apples! Think wild, just like a toddler! 😉

Slice the apple into thin rounds. No need to remove the peel if your child doesn't mind them.
Using a very small cookie cutter, remove the core.
Spread a layer of peanut butter on an apple slice and cover it with another slice.
Repeat the same with yogurt, sprinkled with the flax seeds and olive oil.
