Baby-Friendly Blueberry Millet Pancakes

Soft, nutritious & fluffy bites, perfect finger foods for newbies, and an enjoyable breakfast for the whole family.

These pancakes turned out very soft & sweet enough given they have no sweetener, and they make a filling substantial breakfast for the whole family. Wait for the tiny critic’s feedback 🙈 also, you get real-life audio & behind then scenes in this one 😅 I used millet flour, but you can use wholewheat flour or oat flour. Millet is an ancient wholegrain that is naturally gluten free and very nutritious.. I like using both the flour & the wholegrain to diversify as substitute for wheat & rice.

 1 cup millet flourcan be replaced with whole wheat
 ½ cup ground oats(blitz rolled oats in a food processor)
 1 tsp cinnamon
 1 egg
 1 small ripe banana, mashed
 1 tsp vanilla extract
 2 tbsp melted coconut oil
 1 cup unsweetened almond milk(or other milk you prefer)
 ½ cup blueberries

Mix the dry ingredients

Add the egg, banana, oil, vanilla, then gradually add fhe milk while mixing till you get the desired consistency. You may not need the whole cup based on your flour

Gently fold in the blueberries

Heat a pan on medium, wipe the base with some oil, pour 1/4 cup of the batter and cook until golden then flip and cook until golden on the other side.
