Baby-friendly Granola Bars

Baby- friendly granola bars, for the whole family! Main difference from your regular bars is

1. everything in there is soft & fine, so it melts in baby’s mouth,

2. No added sugars at all, sweetened with dates only.. you just get over the kibbeh-look alike and trust me! 😉

It is kind of a hybrid between a date ball and a granola bar! Packed with goodness and can totally sub for breakfast, especially if you pair it with some Greek yogurt and fruits, for both baby & mama. Little guy loved it too. You can dip it in dark chocolate for the older kids & yourself for a little extra something.

Note: this can technically be served for babies starting 6 months, but make sure you’ve tested for allergies before as it includes potential allergens (almonds, tahini).

 1.50 cups oats
 ½ cup coconut shreds
 ¼ cup almond flouryou can grind some almonds in a food processor
 ¼ cup ground flaxseeds
 1 tsp cinnamon
 ¾ cup soft date paste
 ¼ cup tahini
 ¼ cup water, more or less as needed

Add the dry ingredients into a food processor and blitz to break down the oats and mix them all up.

Add the soft date paste and tahini. If your date paste isn’t soft then make sure to chop it down and soak in hot water before using, or pit and soak dates and blend into a soft paste. Run to get a soft crumb.

Add water gradually and only enough for the dough to come together when pressed together.

Pour into a baking tray lined with parchment paper and press down into a tight layer of even thickness, and bake at 180 degrees Celsius for around 15mins, or until edges start to brown.

Remove from the tray and allow completely before slicing into bars. Dip in melted dark chocolate for older kids if you like.
