Baby-Friendly Sweet Potato Pancakes

Rich, fluffy and delicious. Another one of those recipes that the whole family will love, 6mo-99yr!

These are so delicious, and yet another recipe that happens to be baby-friendly, and perfect for a Sunday morning family breakfast that the whole family would truly enjoy, including the littlest of members.

I based these on my pumpkin pancake recipe, which also makes it to my top 5 pancake recipes, with little adjustments, and absolutely love the result! So soft and moist and pancakey, with just the right amount of flavor hint! The sweet potatoes give it such nice sweetness & richness they’re really good on their own too without any added sweeteners so your baby or toddler will definitely enjoy them as well. Perfect for baby-led-weaning and for lunchboxes.

 1 cup wholewheat flouror all-purpose, you can also use oat or buckwheat for a gluten free version
 1 tsp cinnamon
 ¼ tsp nutmeg
 1 tsp baking powder
 ½ tsp baking soda
 ½ cup sweet potato purée
 3 eggs
 2 tbsp melted coconut oil or butter
 ½ cup milk of choiceor more as needed based on your flour

Mix all dry ingredients together

Add the remaining ingredients and mix

Heat a pan on medium high, brush with a little coconut oil or butter, pour 1/4 cup of batter & cook for a minute until bubble start to form and the bottom turns golden. Flip & cook for another minute or less.
