Chocolate Zucchini Muffins

 1 ¼ cups whole wheat flour
 ¼ cup unsweetened cacao powder
 1 tsp baking soda
 ¼ tsp salt
 1 egg
 ¾ cup coconut sugarcan be replaced with any granulated sugar
 ¼ cup maple syrupcan be replaced with other liquid sweeteners
 ¾ cup milk of choice
 1 tsp white vinegar
 1 cup grated zucchini
 ¼ cup chocolate chips, optional

Mix all the dry ingredients together and set aside.

In another medium bowl, beat the egg and sugar, then add the maple syrup, milk, and vinegar, and lastly fold in the grated zucchini.

Add the wet ingredients over the dry and fold in just until everything is well incorporated. Fold in the chocolate chips if using.

Pour into lined muffin trays and bake in a preheated oven at 180 degrees Celcius for around 12 mins for regular muffins and 8-9 minutes for mini muffins, or until a skewer inserted comes out clean.
