Crunchy, sweet, nutty.. this super easy, super filling and nourishing granola is the only recipe you'll need!
Here’s one of our very favorite family recipes and one that makes it into my regular meal prep rotation, and I am so happy to know that it does for many of you too!
Granola is surprisingly so easy to make and stays fresh and crunchy for weeks, once you try it once, you won't buy any store granola no more! Knowing that you can whip up the tastiest, healthiest most nutritious batch in just a few minutes will surely get you thinking twice before grabbing those sugar-loaded bags with lots of additives from the shelves.
It is also one of those recipes that are great to make with kids, getting them involved in chopping the nuts and adding everything in and mixing. Scroll down to see 4-year old chef Theo making his very own batch!

Roughly chop the nuts.
Place the oats along with the chopped nuts in a large bowl and mix well.
Warm up the honey and the coconut oil in a small sauce pan just until melted and well combined.
Pour the honey oil mix over the oat mix and toss really well until everything is evenly coated.
Spread them over a large baking tray lined with baking paper into a thin layer.
Bake in a preheated oven at 180 degrees for 10 minutes. Then remove them, add the coconut shreds and mix. Then bake again for another 10 mins or until nice and golden. Watch them closely towards the end as they burn fast.
When done, allow them to cool completely on the tray before removing them. They will seem a bit soft but will crunch up as they cool down. Add in the dried fruits if using. Once completely cooled down, store in an airtight container on the counter.
