Here's the grilled chicken & mashed potatoes recipe that'll prove that basic ingredients can be made into a scrumptious meal bursting with flavor with the right seasoning!
Herb-infused garlic lemon grilled chicken strips, on a bed of smooth mashed potatoes and a side of fresh colourful greens is one pretty kick-ass way to make a basic wholesome meal epic! This is seriously one of my favourite simple chicken marinade recipes ever.. basic pantry ingredients that create such a joyful flavour party in your mouth! Healthy wholesome food can & should be fun and exciting and delicious.. and since grilled chicken gets the bad rep of being boring, here’s to prove otherwise 😉
This recipe is enough for around 500-600grams of chicken (around 2 full breasts, or any other chicken cut). All you have to do is mix the marinade ingredients together, and soak your chicken in that aromatic moisturizing bath for a minimum of 30mins or up-to overnight, covered in the fridge. Then grill them in the Airfyer, stove-top pan, oven, or weekend garden grill.. anyway you like!

Slice the chicken breasts into long strips, add them over the marinade and mix really well to ensure they are well coated. Let them marinate for at least 1hr, and up to overnight.
When ready to cook, heat up a skillet on medium high, add your chicken slices in batches so as not to over-crowd your pan/grill and so the slices aren't overlapping. Cook for 3-5 mins on each side. Flip only once the first side is nicely grilled. Serve with mashed potatoes.
