De-constructed stuffed zucchini, for when you love the traditional Lebanese dish but most certainly don't have the time to make it!
If you're craving koussa me7shi (traditional Lebanese stuffed zucchini) but like me find it impossible to find the time (or the will) to core little zucchinis one at a time and then stuff those tiny tunnels, and don't mind exploring a different 'look', then you'll love this! You end up with the same exquisite flavor, but with literally 1/5 the prep time!
Try this, and thank me later!
Sautée the onion until tender.
Add the minced beef with the spices and let them brown.
Add the cubed zucchini, along with the rest of the spices and toss around for a minute, then add the tomatoes and bring to a boil
Finally, add the washed bulgur along with the water, give it a good mix, lower heat, cover and let it simmer for around 10 mins until the zucchini & bulgur is cooked and the water is soaked up.
