Just a few ingredients, pretty easy to put together and turns out so so good! The kind of comfort food recipes you want to have up your sleeve for a rainy day.
Start by grilling the meat in a large pan for a few minutes on each sides until nicely browned.
Thinly slice bell-peppers & onion, add them to the same pan & sauté for 5 mins.
Add the garlic, ginger and spices and toss around for a minute.
Add the crushed tomatoes and toss, them add back the meat.
Add just enough water to barely cover everything, bring to a boil and let simmer on low heat for an hour or so until the beed can be easily shredded with a fork.
Remove the meat, shred it, and place it back in the pot. Mix again until they bubble nicely and serve with rice, quinoa etc.. or in a sandwich!
