Peanut Butter Honey Chicken

An easy and refreshing way to offer chicken & veggies for the whole family!

 500 g chicken breasts
For the marinade
 ½ cup peanut butter
 ¼ cup tamarican be replaced with soy sauce
 ¼ cup honey
 1 garlic clove
 ¼ tsp grated fresh ginger
 ¼ tsp salt
 4 tbsp water
 3 cups frozen mixed vegetables
For baby's marinade
 1 tsp peanut butter
 1 tsp apple sauce
 1 pinch grated fresh ginger
 1 pinch garlic powder

Chop chicken breasts into cubes.

Place all marinade ingredients in a large bowl and mix them to combine well. Remove a quarter of the sauce & set aside.

Add the cubed chicken into the bowl and mix to ensure all chicken pieces are well coated.

Cover and let it marinate for at least an hour, up to 24hrs or overnight in the fridge. Can also be frozen marinated.

Cook to preference. Works nicely grilled or in the oven.

Place the veggies in the pan, drizzle over the sauce you set aside, toss & cook until tender. Serve with a side of rice or quinoa

For baby's version

Mix the ingredients together.
Toss a few cubes or strips of chicken in & let marinate for an hour.
Cook in a pan with a drizzle of olive oil until cooked through. Serve with a side of steamed or roasted veg.
