
These cookies are ridiculously easy to make and hit the spot just right!
I was craving something peanut buttery rich but simple.. and kind of just whipped these up with basic cookie ingredients. They satisfied the crave just right 😉 crumbly melt in your mouth, rich & sweet but not too much. Perfect coffee companion or afternoon pick-me-up.. or a healthy lunchbox treat!
They are ridiculously easy to make, yet hit all the right spots! If you are a peanut butter fan, get-up and make these now!
In a medium bowl, mix the flour, baking soda, and salt. Set aside
In another small bowl, whisk together the egg and sugar, then add the melted oil and peanut butter. Whisk until you get a smooth homogenous mixture.
Pour the wet mixture over the flour mix and fold in using a spatula at first, then with your hands if needed until a smooth soft dough comes together. Form into a ball & chill for 30mins.
Line a baking tray with a parchment paper & preheat the oven to 170 degrees Celsius.
Scoop a tbsp of the batter into a ball slightly flattened and place them on the tray
Break down the chocolate into small pieces and press one down the center of each cookie.
Bake for around 8 mins. Remove just when the bottom has set, they’ll be very soft still & will firm up as they cool down. Don’t over bake them so they won’t dry up.
