Pumpkin Spice Donuts

One of the best baked doughnut recipes you'll try!

One of the yummiest donuts I’ve tried. So moist and soft you’d never guess they’re baked. You can't really taste any pumpkin in there, though it adds so much moisture and flavor and takes the festive spice hints to another level.

One-bowl, 5min prep, 10min baking. Vegan, whole-grain, & naturally sweetened! Let's go!

 ¾ cup spelt flour (or oat or whole wheat)
  cup coconut sugarcan be replaced with other granulated sugars
 ¼ tsp baking soda
 ½ tsp cinnamon
 ¼ tsp ground ginger
 1 pinch ground cloves
 ½ cup pumpkin purée
 ¼ cup melted coconut oilcan be replaced with butter or mild olive oil
 2 tsp apple cider vinegar
 ½ tsp vanilla extract

Place all ingredients in a bowl and mix together.

Pipe or spoon into a doughnut mold or a cupcake tray.

Bake in a preheated oven at 180 deg for 8-10mins until golden and firm to the touch. Let cool a little before removing.

For sugar dusting, brush with melted coconut, dip in or sprinkle some coconut sugar.
