Roasted Bell-Pepper Pasta

A delicious fresh take on a red sauce pasta, and a great way to include some veggies in there.

If you feel like changing up your pasta meals a bit, here's a delicious real simple idea. Roasting the sweet bell-peppers takes them to a whole other level, so don't skip that step, but other than that, all you have to do is blend and boil some pasta!

A delicious way to include some veggies, especially ones packed with so much goodness, in the meals of pasta-loving little ones. If you're trying to get them to eat more veggies, try to involve them in making the sauce, the bright colors, and juicy sweet crunchy sticks might just get them tasting while they cook, and will make it more exciting to taste the final product.

 2 large red &/or yellow belle peppers
 1 small onion
 4 large garlic cloves
 2 tbsp olive oil
 2 tbsp dried oregano
 1 pinch salt & black pepper (to taste)
  cup milk of choice I used almond & it goes very nicely here
 200 g pasta
 ¼ cup grated parmesan, optional

Roughly chop the bell-peppers and onions, and slice the garlic.

Place them in an oven tray, toss in olive oil and the seasoning and roast at 180 degrees until tender and a bit charred

Allow to cool down a bit, then add them into a food processor along with the milk and whiz until blended. Leave it as chunky or as smooth as you wish.

Cook your pasta and toss it over the sauce. Sprinkle some grated Parmesan and enjoy!
