Easy one-pot wholesome comfort meal that's so versatile.
I love one-pot meals, and I especially love when they include lots of colors and are versatile. This delicious flavorful tex-mex can be made in many different way, using what ever proteins and vegetables you like, and it'll be loved by everyone.
You can use minced beef instead of the steak, or you can used cubed chicken, or go for cooked black beans instead for a veggie version. If using other meats, follow the same steps, if using beans, just start with the sweet potatoes and add the cooked beans along with the corn.

Mix your spices together in a small bowl.
Drizzle a bit of avocado oil or olive oil over your steak and sprinkle half of the spice mix on, rub them to coat well.
Heat your pan well then add in the steaks and cook for a few minutes on each side until done to your preference. Remove and set aside to rest for 5 minutes.
In the same pan, add a drizzle of olive oil, then add in the cubed sweet potatoes. Season with a bit of cumin and salt and cook for around 5 minutes, tossing occasionally, until they are cooked through but still have a little crunch.
At this point, add in the onions, peppers, and garlic, and the remaining spices. Toss well and cook for a couple of minutes. Then add the corn and tomatoes, and let simmer for a couple of minutes.
In the meantime, slice your steak and chop your avocado.
Turn off the heat, sprinkle the cheese on top, then add the avocado cubes and top with the sliced beef. Serve immediately.
