Baby-friendly Sweet Potato French Toast

A delicious take on pain perdu that the whole family will truly enjoy!

Yumm•mmmy!! Is all I’m saying here.. whole other level of pain perdu 😉 Not sure who loved it more, baby or me. Try this asap! Notes: *you can use pumpkin instead of sweet potatoes * All I had was whole wheat sandwich bread and it was good, but this is made even better if you use thick sourdough bread slices. *you can add finely ground nuts/seeds or nut butter straight into the mix instead of sprinkling at the end * we added maple syrup to ours, and plain for baby. It is sweet enough thanks to the potatoes & banana.

 ¼ cup sweet potato puréecan be replaced with pumpkin purée
 2 egg
 1 small ripe banana mashed(can be skipped but gives a nice sweetness if not using any for baby)
 ¼ cup unsweetened almond milk
 1 dash cinnamon
 1 pinch nutmeg
 6 thick slices of whole wheat sandwich bread or sourdough

Mix all ingredients except bread in a wide shallow dish.

Place bread slices in & let them soak up for a minute on each side

Heat up a pan, add a dollop of butter or coconut oil or ghee, and toast the soaked bread slices until golden, then flip & toast on the other side.

Top with bananas or other fruits, crushed nuts, and maple syrup or honey for you/older kids. Slice into fingers for baby. And enjoy!
