Thyme & Tomato One-tray Baked Fish & Creamy Peas

This simple one-tray bake is a great mid-week meal idea and a very flavorful way to enjoy fish.

Tomato Zaatar baked fish! I love going simple with fish, and so many easy ways to play around so it is never boring. This one-tray bake is super easy to put together, and the fish comes out moist and flaky and bursting with flavor!

For the fish
 600 g fish filletsI used cod fish here
 3 medium tomatoes, finely chopped
 4 4 garlic cloves, minced
 2 tbsp olive oil
 3 tbsp dried thymeor chopped fresh wild thyme leaves
 2 tbsp sumac
 ¼ tsp salt
 a few fresh cracks of black pepper
For the creamy peas
 2 cups frozen small green peas, thawed and drained
 2 tbsp ricotta
 1 squeeze of lemon juice
 1 pinch nutmeg

Mix all the fish dressing ingredients together.

Place a bit of the tomato mix on a baking tray, lay the fish fillets over then cover them with the remaining dressing.

Bake in a preheated oven at 180 degrees for around 12 to 15mins

For the peas, defrost if needed by soaking in hot water for a few mins, drain, then mix all ingredients together.
