Triple Chocolate Vegan Cookies

Because I think we all need triple doses of little happiness chunks these days any way we can get them.. and trust me, this cookie will make you happy! Super easy to make, no eggs no dairy required, made with dark chocolate, naturally sweetened, and is very soft & chewy and super chocolatey gooey. Guaranteed to hit the spot! It’ll quickly make it to your favorite cookie recipes list..

 1 ¼ cups All-purpose flour
 1 cup Coconut sugarcan be replaced with brown sugar
 ½ tsp Baking soda
 1 tsp Salt
 ¼ cup Unsweetened cacao powder
  cup Almond milkOr any other milk you prefer
 ¼ cup Finely chopped dark chocolate 70% works best
  cup Melted coconut oil
 ¼ cup Dark chocolate chunks or chocolate chips

Mix all the flour, sugar, baking soda, salt & cacao powder together

Add the melted coconut oil & milk and mix with a spatula until all combined then fold in the chocolate chunks or chips & form into a nice shiny dough ball that is soft but not too sticky. Chill for 30 minutes.

Scoop out a tbsp of dough & form it into a ball & lay them on a lined baking tray. Repeat for the rest.

Bake on the top shelf of a pre-heated oven at 190 degrees Celsius for around 10mins. Let cool on the tray before removing.
