You'll never buy crackers again after you try these!
This is by far one of my most popular and regularly made recipes! Honestly, for a very good reason 😉 They are so delicious and so easy to make. Once you try them once, you'll be really hesitant about buying any. Crunchy, earthy and zaatary.. kids loooove them, and you'll love them with a little labneh dip as well! They stay crunchy on the counter for up to a week and make the easiest filling & nutritious snacks to grab and go, or to add to lunchboxes.
They can be made into into square crackers, kaak sticks, and even pretzels! Just make sure to increase oven time for the last two, and roll them thin so you still get that nice easy crunch.
Place all dry ingredients in a food processor and whiz till combined and the oats are a little broken down. You can also mix by hand.
Add the rest of the ingredients except water and pulse to combine.
Gradually add the water while the processor runs just until the dough gathers together in a ball. If you aren’t using any of the optional ingredients then you might not need the whole 1/2 cup.
Tip dough onto a very lightly floured surface and bring together. Split into 2 and roll each into a very thin layer, cut into shapes using cookie cutters, or roll into thin bread sticks/kaak sticks. The thinner, the crunchier.
Place on parchment paper or oiled tray. Brush a little olive oil on top and bake in a preheated oven at 180 degrees for 12 to 15 mins (a bit more for kaak/pretzels) or until starting to brown. Watch carefully as they burn fast. Let cool completely before storing in an airtight container on the counter.
